Description
Cornichons are gherkins less than two inches in length. They are generally pickled in vinegar. The characteristic taste of the larger pickled fruits comes mainly from lactic fermentation; cornichons are pickled whole and have a bright, acidic flavour with varied utilities. Its small size also lends to the construction of hors doeuvres and antipasto plates.
